Amchur (also spelled Amchoor) is made from dried green mangoes. It is an Indian spice that has a tart, slightly sweet flavor with some herbacous notes. Amchur's holds onto its brightness and tart flavor in cooked dishes, unlike citrus flavors that can fade with cooking and also tend to impart some bitterness. It can be used in place of tamarind, lemon, and citrus peels and also works great as a meat tenderizer.
